古法谷物酿酒文化于新石器时代就已存在，其随着时代发展延续至今，凝聚着浓厚的文化价值。但当下社会文化环境对该文化的传承造成了严重的冲击，致使其传承面临危机。而目前，在理论研究层面对其的研究，主要为食品酿造科学以及酿酒发展史两个角度，缺少在保护文化传承角度的研究；在物质形态传承层面上，现有酿酒传承形式主要以传统酿酒作坊式为主，该形式已不再适用于当前的文化语境，逐渐被机械化取代，导致古法谷物酿酒的文化价值逐渐衰弱。 针对古法谷物酿酒文化传承问题为研究对象，通过对文化语境理论、当代消费文化语境特征以及非物质文化遗产相关理念进行理论研究，指出文化语境在产品设计中的具有指导作用，并且在当代消费文化语境中，消费群体调研具有非常重要的作用，为非物质文化遗产传承问题的解决提供理论基础；同时，指出非物质文化遗产由其传承中的文化主体工艺、客体传承群体、载体承载物质形态所构成，传承问题的解决方式是对其进行“生产性保护”，即对其文化主体工艺进行分析，创新其载体物质产品，使其载体被客体传承人群所接受。 随后结合古法谷物酿酒文化传承问题进行针对性分析，产出古法谷物酿酒器具设计模型，制定具体设计步骤，指导酿酒器具进入当代消费市场。研究表明，古法谷物酿酒文化传承问题的解决在于对其主体酿造工艺、客体传承人群、载体酿酒器具的研究上。首先因古法谷物酿酒文化的文化价值体现在主体酿造工艺上，即需要对主体进行过程及操作行为提炼，后结合设计方向，最大化涵盖所有步骤及行为，同时在主体研究中指出设计时需解决的用户痛点；其次，在客体的研究上需进行市场及用户定位，明确其对标市场产品基本情况及目标用户特征，后结合用户需求调研，产出器具设计方向，制定设计策略。最终按其设计策略分步骤落实，绘制具体设计方案，以其传承载体酿酒器具的具体设计呈现，论文研究对古法谷物酿酒文化的传承具有重要的理论及实践意义。

The ancient grain brewing culture existed in the Neolithic Age, and it has continued to this day with the development of the times, embodying strong cultural value. However, the current social and cultural environment has caused a serious impact on the inheritance of this culture, causing its inheritance to face a crisis. At present, the research on it at the level of theoretical research is mainly from the perspectives of food brewing science and the development history of brewing, and there is a lack of research on the protection of cultural inheritance; at the level of material form inheritance, the existing forms of brewing inheritance are mainly traditional brewing. The workshop style is the main method, which is no longer suitable for the current cultural context, and is gradually replaced by mechanization, resulting in the gradual weakening of the cultural value of the culture. Here, the thesis takes the cultural heritage of ancient grain brewing as the research object, and points out the guidance of cultural context in product design through theoretical research on cultural context theory, contemporary consumer cultural context characteristics and related concepts of intangible cultural heritage. It provides a theoretical basis for solving the problem of intangible cultural heritage inheritance; at the same time, it points out that intangible cultural heritage is carried by the cultural subject process, object inheritance group and carrier in its inheritance. Constituted by material forms, the solution to the inheritance problem is to carry out "productive protection", that is, to analyze its cultural subject process, innovate its carrier material products, and make its carrier accepted by the object inheritance crowd. Then, combined with the cultural inheritance of ancient grain brewing, a targeted analysis was carried out, and a design model of ancient grain brewing utensils was produced, and specific design steps were formulated. In order to guide the brewing utensils to enter the contemporary consumer market, combined with the research, the solution to the problem of the ancient grain brewing culture inheritance lies in the research on its main brewing process, the object inheritance group, and the carrier brewing utensils. First of all, its cultural value is reflected in the main body. In the brewing process, it is necessary to refine the process and operation behavior of the main body, so that the final output can be combined with the design direction to maximize the coverage of all steps and behaviors. In the research of the object, it is necessary to carry out market and user positioning, to clarify the basic situation of the products in the benchmark market and the characteristics of the target users, and then combine the user demand research, produce the design direction of the appliance, and formulate the design strategy. Finally, according to its design strategy, it is implemented step by step, and a specific design plan is drawn, which is presented by the specific design of its inheritance carrier winemaking utensils. The research of this paper has important theoretical and practical significance for the inheritance of ancient grain winemaking culture.
